Tandoori-Style Cauliflower

Place a #rack in the middle of the #oven and preheat to 400°F.
Finely grate the @garlic cloves{3} and the peeled @ginger{1%1" piece}. In a #large bowl{}, whisk together the grated garlic, ginger, @plain whole-milk Greek yogurt{⅓%cup}, @extra-virgin olive oil{¼%cup}, @Diamond Crystal kosher salt{1%tsp}, @garam masala{1%tsp}, @ground turmeric{½%tsp}, @Kashmiri chile powder{½%tsp}, and @freshly ground black pepper{¼%tsp} until smooth.
Core the @cauliflower{1%medium head} and cut into 1" florets. Add the florets to the bowl and toss to coat completely in the paste.
Arrange the cauliflower in a single layer on a #rimmed baking sheet{}. Roast until fragrant and starting to brown in spots, ~{20-25%minutes}.
Toss the cauliflower and continue to roast until very tender and browned, ~{15-20%minutes} longer.
For deeper browning, heat the #broiler{} and broil until the cauliflower is starting to char in spots, about ~{2%minutes}.
